The Pickling Factory of Comacchio was built in the early twentieth century. Here it was occured for centuries, and still now it's developed, the processing cycle of eels and acquadelle.
The history and processing eel are a hallmark for Comacchio: eels fished in brackish Valleys surrounding the city, are processed and stored through to a marinating process remained unchanged over time.
Today, the Pickling Factory consists of over one thousand six hundred meters. It's composed by:
- "Sala dei fuochi" (Fire Room), the heart of the complex, where they are kept twelve chimneys, where is still worked the Anguilla marinade of the Comacchio;
- "Calata" (the descent), where they stop boats full of eels and fish destined to marinade .
"Sala degli aceti" (Hall of vinegars) with vats and barrels preserved in its original state.
